***FREEZER FRIENDLY*** (bake and freeze)
So my mom makes these pumpkin brownies that are to DIE for...but of course they're loaded w/ sugar and butter, cake mix from a box...so here is my "healthier" version of a favorite recipe just in time for the Holidays! This dessert feeds a LOT...so lightly grease (w/ OLIVE OIL peeps) a 9x13 dish and lets get goin!
First you have to make your "yellow cake mix" from scratch by throwing the following ingredients into a large ziplock bag:
1 3/4 C white WHOLE WHEAT flour (Hy-Vee now makes their own brand and it is cheaper than anywhere else)
1 1/2 C of SUGAR IN THE RAW...or for those of you who are REALLY into "clean cooking"...use sucanat
1 Tbsp of baking powder
1/2 C non-fat dry milk
Now give the bag a good shakin' while doing the Turkey Dance. What? You don't know that dance? Well c'mon over to my house and I'll gladly show you. Ok, now THIS IS IMPORTANT: SCOOP OUT 1 CUP OF CAKE MIX AND SET ASIDE FOR LATER.
List of ingredients:
4 eggs
Brown Sugar (1 1/2 cups total) OR Sucanat
Unsweetened Applesauce (1 cup total)
2/3 C of Almond Milk (or skim)
1 Tbsp Cinnamon
1 Tbsp Sugar in the Raw or organic sugar...i use the evaporated cane juice from Costco
1 LARGE can of pumpkin puree (or 2 small ones...you want about 30 oz total)...EVEN BETTER OPTION? ROAST YOUR PUMPKIN...SO EASY! (a quick google search can teach you how)
Honey (about 1 Tbsp + 1 tsp)
Old-Fashioned or Steel Cut Oats (about 4 Tbsp)
Directions: Mix 1/2 Cup of Unsweetened Applesauce w/ cake mix (minus the 1 cup that you set aside for later) and 1 egg. It will end up sticky. Spread in the bottom of your lightly greased dish.
Mix 1 Cup of brown sugar, almond milk, cinnamon, pumpkin and 1 Tbsp of honey until smooth. Add one egg and mix some more. Now add 2 EGG WHITES and mix until incorporated. Pour over the cake mix layer in the dish.
Topping: Mix the RESERVED cup of cake mix w/ 1/2 Cup of applesauce, 1/2 Cup of brown sugar, 1 tsp of honey, and about 3-4 Tbsp of Quick Oats. Drop spoonful's of this onto the top...but don't "stir" it in.
Bake at 350 for 45 m-1 hour. (when it looks "set" and not "jiggly" then you are probably good. And if you eat this you can rest assured the rest of you won't be jiggly all over after eating this since we just cut out ALL the butter and a whole heck-of-a-lot of sugar!) Enjoy!
