- 1/4 cups Butter
- 1/4 cup coconut oil
- 1 cup Sucanat
- 1/3 cup + 1 tbsp of honey or maple
- 1 whole Egg
- 1 cup Pumpkin puree (I used homemade pumpkin puree but canned is fine too)
- 1 teaspoon Baking Powder
- 1 teaspoon Baking Soda
- ½ teaspoons Salt
- 1 teaspoon pumpkin pie spice (if you don't have some, go to allrecipes.com and learn how to make your own. It's an easy combo of cinnamon, allspice, nutmeg, cloves etc.)
- 2-1/4 cup GF flour or flour of your choice (I used a mix of oat and spelt flour and it was delicious!)
- 1/4 cup of flax *OPTIONAL
- 1 cup Chocolate Chips (or about 3-4 handfuls) NOTE: I love the Enjoy Life brand...soy free!
Drop onto cookie sheet.
Bake at 350 for about 10-12 minutes or until the bottom edges are light brown. DO NOT BE TEMPTED TO TAKE THEM OUT TOO SOON OR THEY WILL BE TOO "DOUGHY"...11-12 minutes seem to be about just right in my oven.
**These are not overly sweet, so you will for sure want to use chocolate chips. If you wan to sub in raisins instead you could but I would add more sucanat or honey.
