CLEAN BUTTERMILK PANCAKES

Ingredients

1 ½ cups minus 3 tbsp of Namaste Perfect Flour Blend
t tbsp of baking powder
¾ tsp of kosher/sea salt
2 tbsp of ground flax or chia seeds *optional
I cup milk + 1 tsp of white vinegar (buttermilk)
2 egg whites
4 tbsp of unsweetened applesauce
1 tsp of pure vanilla extract
1 tbsp of agave nectar, honey, or maple syrup

If making your own buttermilk, gently stir in 1 tsp of vinegar to 1 cup of milk and let sit for 5 minutes.

In a small bowl, sift together flour, bak powder, salt and flax/chia. In a large bowl, whisk together buttermilk, eggs, applesauce, vanilla extract, and agave. Add the flour mixture to the buttermilk mixture and stir GENTLY, JUST UNTIL COMBINED. DO NOT OVERMIX. To ensure tender, fluffy pancakes, make sure and leave some lumps. If adding any berries or chocolate chips, fold them in w/ a spatula.

Heat a griddle to medium and coat w/ some olive oil and maybe a little butter if you want. Using a ¼ cup measure, pour the batter into the hot pan and don't flip until you see bubbles forming on the top and the sides are set. (about 2 minutes or so)

Top w/ some maple syrup, agave, and/or homemade honey whipped cream!
