DRY PANCAKE/WAFFLE MIX: pantry, vacay's to camping out

BYE BYE BOXED PANCAKE MIX!  This takes less than 5 minutes to make and stores forever.  Original recipe came from www.weelicious.com and I tweaked it just a little to make it clean.  (all I did was take out the white sugar)

Directions:

Get a 1 gallon ziplock bag and w/ a sharpie write both the MIX ingredients AND directions of how to make pancakes.  Trust me, this little step makes it so easy to pull out your bag and get cookin'.  It also will ensure that you will recycle your ziplock bag over and over as you keep filling it up w/ your mix.  I'm all about TIME SAVING!

MIX: (toss all into ziplock)

6 cups of Namaste Perfect Flour Blend
2 TBSP baking powder
1 TBSP of baking soda
2 tsp of sea salt

PANCAKE INSTRUCTIONS: (SERVES 4)

1 egg white
1 cup of any kind of milk (almond, coconut, regular, buttermilk, etc)
1 tbsp of any kind of "oil" (coc oil, olive, sweet pot puree, unsweetened applesauce, etc)
1/4 cup of ground flax or chia seeds
1 tsp of natural liquid sweetner (agave, maple syrup, honey, etc)
1 Cup of Pancake Mix

Mix above ingredients in a bowl.  DO NOT OVERMIX.  You like it lumpy. (don't get to hear that everyday!)

Heat a griddle on medium heat and make sure it is HOT before you add the pancakes.


* Mixture can also be used in a waffle iron following manufacturers directions.

** If you do not have buttermilk you can make it by adding 1 tablespoon of lemon juice or white vinegar to 1 cup of milk.

  1. We will have to try this! Thanks. We use Pamela's Products Gluten Free mix but I'm interested to try a homemade version to see how it is.
