Chocolate Chip Applesauce Snack Cake

**FREEZER FRIENDLY**

Beware!  You just might end up eating the whole pan! :)

1 cup flour of your choice (please, don't use white.  We will typically do a combination of spelt, almond, coconut, brown rice, amaranth, millet or Namaste GF flour blend from Costco...Basically, just toss together some good, wholesome flours until you have 1 cups worth!)
1/3 cup of oat flour (I make my own...just process oatmeal OR you can use all almond meal)
3/4 tsp baking soda
3/4 tsp sea salt
1/2 tsp cinnamon
1/4 tsp baking powder
1/4 tsp allspice
handful of ground flax or chia IF you have it...if not, no worries.
1/4 cup butter or coc oil, softened to room temp
1/2 cup organic sugar or sucanat
4 tbsp of agave nectar or maple syrup or raw honey (or combo of the 3)
1 1/4 cup of ORGANIC unsweetened applesauce (ONLY organic when it comes to apples people...otherwise its like feeding your kids POISON!)
2 organic or farm fresh eggs, beaten
1 tsp vanilla extract
1 hefty handful chocolate chips (or dried cranberries/raisins...but give me the chocolate!)

1. Heat oven to 350 and grease 9 inch square pan
2. toss all the dry in mixing bowl.  Sift.  Add everything else and mix well.  Bake 40-50 minutes or until center is set.

  2. VERY easy...throw it all in the bowl, mix, and bake. Kids love it...we like ours chilled.

  3. FYI: I doubled it yesterday and it didn't take near as long to "set" in the center. Maybe 35-40 min?? So be sure and CHECK IT!
