High Protein Pancakes

***FREEZER FRIENDLY***


LIGHT, FLUFFY, GREAT TASTE, AND OH SO GOOD FOR YOU!

Makes about 12 pancakes

Ingredients:

1 cup plain Greek Yogurt (or plain yogurt)
7 tbsp Namaste Perfect Flour Blend
1 tbsp of coconut sugar (or use agave nectar but use a little less than 1 tbsp as it is sweeter than sugar)
1 tsp baking soda
1/2 tsp salt
2 large eggs
1/2 tsp of pure vanilla extract (NOT imitation!)
REAL BUTTER
Pure Maple Syrup (skip the pancake syrup folks!...trust me, you'll never go back!)


1. Place iron skillet on med-low heat so it gets nice and hot while you are mixing
2. Place yogurt in med mixing bowl.
3. Dump in flour, sucanat, bak soda and salt
4. STIR TOGETHER VERY GENTLY.  It does NOT have to be completely combined.  It will be very "textural"...this is a good thing.
5. Whisk the eggs in a seperate bowl
6. Add vanilla extract to the eggs and whisk to combine.
7. Pour egg mixture into flour mixture and STIR GENTLY.  Again, it doesn't have to be totally combined.
8. Melt about a tbsp of butter (or if you wanna be extra good, olive oil) in your skillet.
9. Pour batter into skillet about 1/4 cup at a time.  Cook for about 1-1 1/2 min, flip, cook for another 45 sec then remove to a plate.

Top w/ butter and PURE MAPLE SYRUP  Easy Peasy!

PS:  don't be afraid to get creative...add a dash of cinnamon, mashed banana, blueberries, etc to "customize" your dream pancake!  But these are DELICIOUS!!!  (I'm eating one as I type this out!)
