Honey-Lemon Grilled Chicken

Lemons just scream "SUMMER!"  This is the most delicious recipe and the lemony flavor was just the right amount.  YUM.

Ingredients:

Juice and Zest of 3 lemons
1/3 cup olive oil
1 tsp or so of fresh oregano, diced (I didn't measure, just cut some up and threw in bowl)
1 tbsp of fresh basil, diced
1 tbsp of Dijon mustard
2 tbsp of honey
1/2 cup finely diced onion
1 clove of garlic, minced
1/2 tsp of salt
1/2 tsp of fresh ground pepper
4 boneless, skinless chicken breast: I sprinkled each breast w/ sea salt and pepper.

Throw marinade ingredients in a bowl and mix well.  Set aside about 1/4 cup for basting during grill time.  BE SURE AND POUND YOUR CHICKEN FLAT/THIN BEFORE GRILLING.  (Why? you might ask...it will cook more evenly and produce a very moist texture.)  Pour marinade over chicken and allow to sit in frig for at least 30 minutes...all day even better.

Grill until juices run clean, basting occasionally w/ the reserved cup.

**Leftovers?  Me too~which is why tomorrow night I'm going to make Pioneer Womans Leman Basil Pasta and toss in some of our left over chicken.  Can't wait!!!!
