Are you one who loves a
fruit topping on your ice-cream or waffles? Or do you love applesauce?
Heck, you could even use this as a quick homemade Jelly! This is a
great, healthy alternative to all those syrups and jellies you buy in
the store. And it is SO EASY.
Ingredients Needed:
Fruit of your choice (today I used my rhubarb cuz it's growing out of control!)
Honey
a little Pure Maple Syrup (or just use more honey...but I like mixing up my sweetners)
a little water
a little lemon juice
a little pure vanilla extract
Chop up your fruit. Doesn't have to be really small...it will break down when you cook it. Toss it in a pan w/ some water (just enough to coat the bottom of the pan...you can always add more if you think it needs it) and let simmer about 5 minutes or so. Add all the other ingredients, being careful not to put too much honey/syrup in. You'll have to taste as you go and keep adding your honey/syrup until you have the desired sweetness.
I use a slotted spoon to "mash" as I stir to it's not too chunky...but you can do whatever you like.
Let the liquid reduce a little...you have complete control over how thick or thin you want your sauce to be. The longer it cooks the thicker it comes as the liquids evaporate.
Pour in a glass bowl and BING! You've got a great summer, no-sugar sauce to use in many different ways. Enjoy!
